Thyme Poached Peaches
Makes 4 to 6 Servings
‡ cup sugar
2 tablespoons mild honey
1 tablespoon fresh lemon juice
2 sprigs fresh thyme
4 cups water
4 to 6 peaches
Fresh sprigs of thyme, to garnish
Put the sugar, honey, lemon juice and thyme in a saucepan large enough to hold the peaches in a single layer. Add four cups water. Bring to boil and simmer, covered for 10 minutes.

Add the peaches and simmer five to ten minutes until fork tender. Remove with a slotted spoon to a serving dish. Peel off the skins Boil the liquid down to ‡ cup until thick and syrupy. Strain over the peaches. Garnish with fresh sprigs of thyme. Serve warm or at room temperature.
